What is the default password for the Ubuntu root user account on the Bitnami SVN stack VM?

I was able to set the root password using “$ sudo passwd root” which led me to wonder what the default is.

The “bitnami” user password is “bitnami” and this user has root privileges. You can run any root command using the “sudo” command.

The root password is a random-secure password that it is generated during the first boot so nobody knows this password and it is different for all Virtual Appliances. As you said, you can change it using the “sudo passwd root” command.
